For over two decades, Rosebud Steakhouse has stood as a symbol of excellence in Chicago’s legendary dining scene. Founded in 2000, the original location at 192 E Walton Street, just off the Magnificent Mile, quickly earned a reputation for delivering premium cuts of beef, white-glove service, and timeless ambiance. It became more than a restaurant; it became a Chicago institution.

In September 2020, at the height of the COVID-19 pandemic and during one of the most challenging times the restaurant industry had ever faced, Rosebud Steakhouse entered a bold new chapter under the ownership of CHC Restaurants. Despite the uncertainty of the moment, CHC recognized the enduring value of the Rosebud Steakhouse name and made the strategic decision to purchase not only the original location from The Rosebud Restaurant Group but also the full rights to the Rosebud Steakhouse brand. Led by Angelo Eliades and Steve Coppolillo – two hospitality veterans with over 35 years of experience each, CHC stepped in with a vision to preserve the restaurant’s rich legacy while reimagining it for long-term growth, consistency, and national expansion.

CHC’s ownership is deeply committed to excellence and attention to detail, applying a guest-first mindset to every decision, from service standards to design and menu development. This philosophy is at the heart of everything Rosebud Steakhouse represents.

It is important to note that Rosebud Steakhouse is no longer affiliated with The Rosebud Restaurant Group, which operates Rosebud and Carmine’s restaurants in the Chicagoland area. We operate independently, and therefore do not accept or honor any gift cards or promotions issued by Rosebud Restaurants or valid at their other locations.

From day one of the acquisition, CHC Restaurants partnered exclusively with Meats by Linz, a premier purveyor of USDA Prime beef. Every steak served at Rosebud Steakhouse is hand-selected, expertly cut, and aged to perfection, a standard we believe is unmatched in the market.

Our culinary offerings extend beyond the plate. Our chefs craft menus that balance classic steakhouse staples with modern interpretations. Paired with an elevated wine and cocktail program, Rosebud Steakhouse offers a complete fine-dining experience for discerning guests who appreciate both tradition and innovation.

Expansion with Purpose

What began as a single iconic location in Chicago has grown into a multi-state brand, now present in Illinois, Indiana, and Texas, with further growth on the horizon. Each new restaurant is more than a replica—it’s a thoughtful extension of the Rosebud Steakhouse experience, adapted to reflect its local community while maintaining our signature standard.
